- Analytical method using headspace GC-MS has been optimized for the determination of 1,3-DCP in food. The limit of detection (LOD) of analytical method using headspace GC-MS was 20 – 40 ng g-1 in representative matrices such as water and gruel.
On the other hand, LOD ranged from 3.85 to 4.75 ng g-1 in TMS derivatization method. Both methods had linearity (R2 ≥ 0.9984), precision (RSD ≤ 24%). Therefore, these results offer basic information to establish policy for reducing of 1,3-DCP in food.
