Abstract
β-carboline (norharman) and 2-methyl- β-carboline (harman) are kind of heterocyclic amines (HCAs) that are formed in protein-rich foods by the reaction of tryptophan with some aldehydes under oxidation condition. It has been well known that β-carbolines were proved to have a negative effect on mammalian tissues and organs in animal experiments. It may take a role as potential mutagen or co-mutagen. A method for determination of heterocyclic amines (HCAs) in vegetables and its processed foodstuffs was developed using liquid chromatography-tandem mass spectrometry (LC-MS/MS) for total diet study. The pretreatment procedure included the antioxidant such as ascorbic acid to avoid the any possible artifact formation from tetrahydro - β – carboline – 3 - carboxylic acid.
