The effectiveness of chitosan-based feed additive (CBA) was evaluated on growth and cumulative mortality of Japanese flounders. A novel aquaculture method was tried in order to produce healthier fish meat of Japanese flounders, particularly have more against microbial diseases and rich in polyunsaturated fatty acids (PUFA). There were no difference in average body weight of fish between the experimental group and the control group during culture period. The cumulative mortalities of fish fed with CBA were reduced about 39% when compared to than those of control, which might be due to the frequency of fish activity and disease resistance significantly. The eicosapentaenoic acid and docosahexanoic acid contents of fish fed with CBA were also increased by about 1.5 and 1.2 times after 12 month evaluation, respectively. The drip loss of fish fed with CBA was decreased about 36.5% when compared to than that of control group. The textural study of the flesh showed that the G' (storage modulus) was much higher than that of control group.-
