dc.description.abstract | Liposomes are one of the most intensively studied type of lipid nanovesicles. Liposomes increase the bioavailability of insoluble or poorly soluble materials, hence offering a wide range of food applications. In spite of such advantage, the use of liposome has been constrained by the fact that a toxic organic solvent is required during the manufacturing process to disperse the emulsifier. To this end, an environmentally friendly solvent-based liposome manufacturing system was developed and optimized. It was selected that a non-toxic solvent capable of dispersing phospholipids. Additionally, it was determined that the significant variables affecting the processing efficiency of liposomes using the Plackett-Burman (PB) design and the Response Surface Method (RSM) to optimize the process for mass production. As a result, liposomes with size and dispersion stability of approximately 180 nm and ? 58 mV were obtained. Additionally, cells were treated with liposomes containing functional materials that is unstable or insoluble in water. In results, bioavailability was more than doubled in cell experiments compared to a functional material treatment. | - |
